Selling baked desserts by the slice or piece is how owner Lydia Cook plans to do business at A Piece of Cake, which opens Tuesday at 419 Main St. in Texarkana, Texas.

"No wedding cakes, no birthday cakes-we will be about pieces of pastries here," said Cook, who lives in Fouke, Ark. "Whole cakes and pies can be special-ordered, but when you walk in our door, (single-serve dessert) is what we will have."

Cook said she has lived in the area for 46 years. In that time, she has been perfecting her baking skills. This will be her first time running a business.

"We will also offer beverages-mostly coffee, water and bottled drinks at first," she said, "but we hope to expand as time and circumstances permit."

The property has seen businesses come and go.

"Previously, it was a dress shop," Cook said. "I was a customer there. One day, I showed up (and) it wasn't there. I had to track down the owner through the city's tax assessor office and eventually made the arrangements to buy the place. It has been also a lawyer's office, as well as a recording studio."

One feature that stands out about the property is a rather large backyard-like area.

"We have plans for that area," she said. "We will hold events in that space at some point."

A Piece of Cake will be open 10 a.m. to 6 p.m.
