Jalapeno Cornbread

2 boxes Jiffy Mix® cornbread

1 medium onion, chopped

1 can cream-style corn

1 small can jalapeno peppers, chopped and drained

2 eggs

1 C shredded cheddar cheese

1 C milk

1 stick melted butter

Mix all ingredients except butter in bowl. Place in a 10x13-inch casserole dish and pour melted butter over the batter and bake in a 400º oven for 40-45 minutes. Remove from oven and sprinkle with additional cheese if desired.
