Chilango's recently opened its doors in Texarkana, in the location formerly occupied by Esperanza's. Featuring fresh meat and seafood, flavorful but not overpowering spice, Chilango's is a temple to the taste of Tex-Mex.

Armando Ramirez and Omar Villegaz co-own the establishment. Having lived in Texas, they have gotten a good look at the tastes of Texas and Mexico and have seen how they come together in the fusion of
Tex-Mex.

"We are aiming for the simpler Tex-Mex flavor," said Villegaz. "Pure Mexican food tends to have more in the way of spices, as well as hotter. Texas often appreciates a milder flavor."

Tex-Mex first came into existence during the early days of Texas, as settlers moved into the region and encountered Mexican culture. As more Americans came to live in Texas, Mexican food became more popular and Texans began adding their own twists, most notably beef. With flavors that trace their ancestry back to the Mayans and other Mesoamerican groups bringing their cooking together, these then combined to become the unique fusion cuisine called Tex-Mex.

"Our menu showcases our meats," said Ramirez. "You'll see different meats, always fresh. Beef, chicken, seafood. Yes, you'll see rice and beans, same as pure Mexican food. But our spices will be different. Also, Tex-Mex tends to mix more vegetables into the recipes."

Chilango's also features various condiments. With the customary chips and salsa, customers also get treated to a mild bean dip as an alternate
flavor.

The restaurant features a cozy bar, but alcoholic drinks are not being served just
yet.

"We are finishing up the paperwork on that," said Ramirez. "When we open the bar fully, it will be the basics once again, mainly beer and margaritas."

Fajitas are the mainstay of Chilango's menu and the pride of their offerings.

"Once again, fresh meat is key. Our steak fajitas are popular and our shrimp fajitas are also in demand. It is a standout on our menu," he said, "Our goal is your satisfaction."

Chilango's is open 7 days a week, 10:30 a.m.-9 p.m., Mon.-Thurs., and 10:30 a.m.-10 p.m. Fri.-Sat.
