TEXARKANA, Ark. - The building is modest, constructed of brown brick with a cafeteria-like appearance. A "grand opening" sign speaks to its newness to the College Hill neighborhood.

Inside, a customer is greeted with the sight of warm trays of various breakfast pasties, stuffed with an array of meats, cheeses and more. Phal Pich, the owner, works with sister, Neven Mao, to dish up the dishes for the breakfast crowd.

"We are set up for mostly breakfast stuff, and the idea is variety," Pich said. "We even have some items and combinations you may not have heard of."

One example may be the kolache stuffed with boudin, the rice, meat and spice sausage claimed by the Cajun country of Louisiana as one of its
signature dishes.

Pich has been putting his efforts into coming up with these combos, but also the standards are there for more traditional customers as well.

"I'm a trained cook and certified professional food manager," he said. "For a long time, there were very few restaurants in this neighborhood. I saw one niche needing filled, so I opened my place to
do just that."

Though breakfast is where they have pitched their initial tent, Pich does have plans beyond baking biscuits and scrambling
eggs.

"We may add more to the menu," he said. "Right now, we are considering pizza recipes, various ways to make chicken. A lot of it will depend on what our customers seem to
want."
