TEXARKANA, Texas - Capital Burger has opened its doors to Texarkana's hungry public. Hearkening to the Twin Cities reputation as the "burger capital of Texas," owner Bryan Ogburn is beefing up - and sometimes beefing down - what goes between the buns.

"Our menu has a variety of ways of making your burger," he said. "Not only do we have your standard hamburgers and cheese burgers, but we have some new approaches you haven't tried before. On our initial menu, one that is proving surprisingly popular is our Country Fried Hippie."

The Country Fried Hippy is a veggie heavy burger. Those wanting vegetarian options can take it meatless, but those wanting the beef in between can have it that way as well.

"It has been popular either way," he said.

The menu will change and expand over time, with more flavors and options.

"Time will just bring more," he said. "for example, right now, our kitchen is in our trailer beside our restaurant. Eventually, we want to build a kitchen inside the building, and this will allow us to do even more ideas and combos."

Once he gets licensed, beer and wine will also be on the menu.

Capital Burger opened last week, Sept. 11, to be precise.

"We did not plan that, honestly," said Ogburn.

"Our target date was the 10th. But that's just how we moved aside some of the final official steps. I didn't even think about the fact it was 'that day.' We were so busy, we did not realize it until later.

"But that day had a somber mood to it. I always think of the number 343 when that day rolls around, which is the number of firefighters, including a chaplain and two paramedics with them, who died when the twin towers of the World Trade Centers came down. We were happy to finally be opened, but that sober note always hung with us when the thought of that day crossed our minds."

As for how things have been going, Ogburn brightens, and says, "Things have been going great so far. Those who know the work we do here say this is now an even more 'wow' experience."

Capital Burger is located at 5309 N. State Line Ave. Visit them on Facebook. Their hours at present are 11 a.m - 8 p.m., Monday through Thursday, and 11 a.m. - 9 p.m. Friday and Saturday. "When the COVID restrictions lift, we will likely revisit those hours," Ogburn said.)
